easyJet is a UK airline. For flights operated by a UK carrier the UK rules (UK261) may apply instead. The route and the operating carrier decide what applies in your case.
How EU261 applies to easyJet
For flights operated by the British easyJet UK Limited, Regulation (EC) No 261/2004 as a rule applies only to flights departing from the EU/EEA, whereas flights operated by easyJet Europe (Austria) are covered both on departure from and on arrival in the EU/EEA. For the Swiss easyJet Switzerland, the EU–Switzerland air transport agreement means that EU261 also applies in Switzerland. The route and the actual operating air carrier always determine applicability, not the brand on the ticket.
Who operates the flight
According to easyJet's own notice of passenger rights, the group's flights are operated by three separate companies: easyJet UK Limited (United Kingdom), easyJet Europe Airline GmbH (Austria) and easyJet Switzerland S.A. (Switzerland). Which company in fact operates a given flight determines which set of rules applies (EU261 or UK261).
